Title: Red Wine Marinade

Yield: 1 Servings

1cDry red wine or unsweetened red grape juice
1/2cOlive or vegetable oil
1/4cChopped onion
1/4cChopped fresh parsley
2tbChopped fresh tarragon leaves*
1/2tsCoarsely ground pepper
2tsFinely chopped fresh garlic
1tsGrated lemon peel

*2 teaspoons dried tarragon leaves can be substituted for 2 tablespoons fresh tarragon leaves.

In medium bowl stir together all marinade ingredients. Use to marinate 2 pounds meat (chicken, pork or beef). Cook as desired. Yield: 2 cups.
